摘要 PROBLEM TO BE SOLVED: To obtain a gelled seasoning having excellent heat resistance and freezing resistance and usable as an ingredient of a fried food by adding a seasoning to a liquid dispersion produced by dispersing curdlan in water at a prescribed concentration and heating the mixture at a prescribed temperature. SOLUTION: The objective gelled seasoning is produced by dispersing curdlan in water at a concentration of 1-8 wt.%, adding a seasoning such as Worcester sauce to the dispersion and heating the mixture at >=80 deg.C. Preferably a fried food is prepared by immersing an ingredient containing the gelatinous seasoning in batter, dusting with flour, frying in an oil and freezing the fried product.
