PROBLEM TO BE SOLVED: To provide a method for easily producing L-carnosine useful for medicines, health foods and the like, in high yield and high purity. SOLUTION: The method for producing L-carnosine comprises a purification step, in which step, seed crystals of L-carnosine are added in a mixture solution obtained by mixing an aqueous solution of L-carnosine crude body containing impurities with an alcohol such as methanol, aging at 30-80°C for 1-10 h, and adding more alcohol to the mixture solution to yield highly purified L-carnosine crystals.
