PROBLEM TO BE SOLVED: To provide a coffee beans roaster for producing tasty roasted coffee beans with predetermined roast color and predetermined moisture content, and to provide a method for easily and economically producing such tasty roasted coffee beans using the roaster. SOLUTION: The method for producing tasty roasted coffee beans with predetermined roast color and predetermined moisture content is provided, involving using the coffee beans roaster 1 comprising a roasting pot 3 equipped with a stock coffee beans feeder 2, a drive 5 functioning to revolve the roasting pot 3 itself around the vertical central axis 4, a device 6 for making the roasting pot 3 ascend/descend as necessary, a heating device 10 for heating the roasting pot 3 by feeding the pot 3 with hot air of predetermined temperature, which is circulatingly used, a quencher 14 for quenching roasted coffee beans by spray-feeding the roasting pot 3 with a predetermined amount of cold water of predetermined temperature, a device 15 for unloading the above quenched coffee beans from the roasting pot 3, a device 16 for air-cooling the unloaded coffee beans to room temperature and a controller 17 for controlling these devices mentioned above.
