<p><P>PROBLEM TO BE SOLVED: To provide a method for producing an alcohol with which fermentation can be accelerated or operation efficiency can be improved in the method for producing the alcohol usable as alcoholic beverages including Shochu (Japanese distilled spirit) and further uses, e.g. for sterilization and disinfection, fuels, etc., other than for beverages. <P>SOLUTION: The method for producing the alcohol is carried out as follows. An enzyme preparation and/or a Koji, a yeast and water are added to bread as a raw material and acids, as necessary, are further added thereto.
