A method of manufacturing adlay noodles by mixing adlai(Job's-tears) powder, wheat flour, salt and baking soda and then kneading is provided. The noodles have a chewy texture and do not show the change in the shape when heated in water. Grain flour is kneaded with 2.5% by weight of saline water, formed into noodle form, heated at 100deg.C for 5 to 7hr and washed with cold water. The grain flour contains 20 to 80% by weight of adlay powder and 80 to 20% by weight of wheat flour. In the process, 20% by weight of sweet potato powder is additionally mixed with wheat flour and sweet potato powder in a weight ratio of 1:3:1. |
