METAL SOAP FOR ADDITION TO FOOD AND PROCESS FOR PRODUCTION THEREOF

A metal soap intended to be added to a food, which is useful as a food additive used for the purpose of improving fluidability, preventing solidification, reducing a hygroscopic property, improving texture or the like, has little influence on a food, comprises a C_6-24 fatty acid calcium or magnesium produced by metathetiacl method, and shows a pH of not lower than 6 and lower than 7 when prepared in the form of an aqueous 2% (by mass) dispersion solution; and a process for producing a metal soap intended to be added to a food, the process comprising reacting a C_6-24 fatty acid with a monovalent basic compound in an amount of not less than 0.9 and less than 1 mole per mole of the fatty acid to yield a basic compound salt of the fatty acid and then reacting the basic compound salt with a calcium or magnesium salt in an aqueous medium.
