PROBLEM TO BE SOLVED: To provide a crosslinkable protein having high gelling or crosslinking ability, capable of being crosslinked under mild environment without using a compound having high toxicity to living bodies and excellent in stability of the crosslinked product. SOLUTION: The crosslinkable protein is obtained by binding a protein to a compound (A) represented by general formula (1) (wherein R1is an alcoholic hydroxy group, a primary or secondary amino group or a carboxy group; R2is a 1-10C hydrocarbon which may have a substituent group; one or two groups in A1to A5are phenolic hydroxy groups and the remainders are hydrogen atoms or 1-6C alkoxy groups and when two groups in A1to A5are phenolic hydroxy groups, two phenolic hydroxy groups are located at ortho or para position).
