PROBLEM TO BE SOLVED: To provide a vitamin degradation preventing agent effective for suppressing the degradation of vitamins and discoloration to dark brown color, etc., even in the presence of minerals, and provide a vitamin-enriching preparation capable of suppressing the loss of vitamins and the degradation of the appearance and taste in storage even in the presence of minerals. SOLUTION: The vitamin degradation preventing agent contains a water-insoluble polyvalent metal salt, an enzyme-decomposed lecithin and a polyglycerol fatty acid ester, and the vitamin-enriching preparation contains vitamins and the vitamin degradation preventing agent.
