<P>PROBLEM TO BE SOLVED: To provide a low pH food having sour taste/sour smell masked without affecting taste, texture and preservability, and to provide a method for producing the low pH food. <P>SOLUTION: This method for producing the low pH food comprises adding 0.03 to 1,000 ppm of catechin compounds to a low pH food by a method such as (1) a method for compounding a food raw material with the catechin compounds, (2) a method for dipping a food in a solution of the catechin compounds, or (3) a method for coating the food with a solution of the catechin compounds. <P>COPYRIGHT: (C)2007,JPO&INPIT |
