A method of making an isolated soybean protein composition containing crude protein isolated from bean curd residue is provided. Cheongkukjang(soup prepared from fermented soybeans) having excellent efficacy and taste is prepared by using the isolated soybean protein composition having high contents of crude protein. The isolated soybean protein composition contains more than 40% by weight of crude protein(dry state) isolated from bean curd residue. The protein composition is obtained by the steps of: grinding an aqueous bean curd residue mixture containing bean curd residue and water in a weight ratio of 1:5 to 1:20 to give raw soybean milk; treating the raw soybean milk with a base and subjecting to solid-liquid separation to give crude protein liquid; treating the crude protein liquid with an acid and subjecting to solid-liquid separation to give crude protein precipitates; and drying the crude protein precipitates. The raw soybean milk is subjected to enzyme treatment using amylase or cellulase after the acid treatment. The mixture containing more than 40% by weight of crude protein is inoculated with Bacillus natto and fermented to give soup prepared from fermented soybeans. |
