<P>PROBLEM TO BE SOLVED: To provide vanillin acetals having excellent sharp taste and warming effects, and also having excellent cold sense-enhancing effects; to provide a sensory irritant composition containing the compound; to provide a perfume composition, a food and drink, cosmetics, daily sundries, an oral composition or a medicine, containing the sensory irritant composition formulated therewith; and to provide methods for producing them. <P>SOLUTION: The vanillin acetals represented by general formula (1) (wherein, R is a hydrogen atom, a linear or branched 1-9C alkyl group or a linear or branched 1-8C alkoxy group) exhibit the excellent sharp taste and warming effects, and also exhibit the excellent cold sense-enhancing effects.
