PROBLEM TO BE SOLVED: To form an incision having a predetermined depth along the longitudinal direction of a shrimp. SOLUTION: An incising device 1 is constituted of a base 2, a conveying device 3 installed to the base 2 and having a pair of conveying belts 33 for conveying the shrimp by nipping the same from width sides and a rotary blade device 4 having a freely rotating rotary blade 46 locating in the center of the pair of conveying belts 33 in the downstream side of the conveying device 3. The rotary blade 46 comprises a press plate 462 and a rotary blade body 461 having a larger diameter than the outer diameter of the press plate 462 and protruding from the outer peripheral surface of the press plate 462 and forms an incision having a depth corresponding to the difference of the radius of the rotary blade body 461 and that of the press plate 462 in the longitudinal direction of the shrimp by pressing the shrimp by the press plate 462 of the rotary blade 46 in conveying the shrimp through the conveying device 3.
