Production of hollow pigment structures (I) involves: (a) providing yeast biomass consisting of yeast cells (preferably with a low germinated proportion) with a cell wall structure having a negative surface charge and a high adsorption capacity for large cations; and (b) forming stable cellular hollow bodies by mineralizing the yeast cell wall.
