PROTEASE OBTAINED FROM KYENEGUM AND METHOD PRODUCING THEREOF

A protease from chicken gizzard lining is provided to extract the protease from food industry waste resource of chicken gizzard lining, isolate and purify it, thereby being applied to an enzymatic agent. The protease is obtained from dried chicken gizzard lining. The method comprises the steps of: (a) mixing 25 grams of dried chicken gizzard lining powder having a size of 70 meshes with 700 ml of vinegar; (b) agitating it with the speed of 250 rpm for 10 minutes; (c) shaking it at a temperature of 40 deg.C with the speed of 200 rpm for 7 hours; and (d) filtering it under reduced pressure.
