<p>Producing a mixture of top-fermented weiss beer, speise (wort) and yeast comprises adding a continuous stream of speise to a continuous stream of weiss beer, mixing the beer and speise, determining the apparent extract content of the mixture, adjusting the beer/speise flow rate ratio in response to the apparent extract content, and then adding the yeast. An independent claim is also included for an arrangement for producing a mixture of top-fermented weiss beer, speise and yeast, comprising a beer pipeline and a speise pipeline connected to a multi-way valve; a flow meter in the beer pipeling; a flow meter and regulating valve in the speise pipeline; a mixer, an extract measuring device and a carbon dioxide measuring device in a pipeline leading from the multi-way valve; and a control unit that receives signals from the flow meters, the extract measuring device and the carbon dioxide measuring device and controls the regulating valve.</p> |
