PROBLEM TO BE SOLVED: To provide a fermented tea beverage having little bitter and astringent taste in spite of having higher concentration of the whole of polyphenols, and causing little change in flavor, color tone and transparency of appearance during preservation. SOLUTION: The fermented tea beverage has≤50 mg/100 m of the concentration of nonpolymer catechin, and 100-500 mg/100 ml of the concentration of the whole of polyphenols. COPYRIGHT: (C)2007,JPO&INPIT
