The invention relates to natural hydrocolloids and use thereof. Said hydrocolloids are obtained from seeds of the plant family Lamiacea and in particular of the plant species Ocimum gratissimum or Ocimum sanctum. Plants such as salvia, amongst others, belong to the family Lamiacea and plants such as rosemary or basil, amongst others, belong to the species Ocimum gratissimum or Ocimum sanctum, such as occur in sub-tropical regions.
