PROBLEM TO BE SOLVED: To provide a method for maintaining sanitary of a malt production device in enzyme industry and brewing industry where solid fermentation is mainly utilized. SOLUTION: The method for maintaining sanitary of a malt production device comprises sterilizing air in a malt production device 1 and the surface of each device after chemical cleaning or water cleaning in a cleaning process while preparation liquid having sterilization effect can be sprayed in the inner part of the malt production device 1 consisting mainly of an air conditioner 14 regulating air, an air circulation duct 18 comprising a plurality of air conditioning ducts, and a malt production chamber 3 holding malts under watering condition or atomizing condition.
