摘要 Provided are a method for preparing a perilla oil-glutinous rice-sulfur duck nutritious juk(Korean rice porridge), and the juk prepared by the method which is removed in the specific smell of a duck and is excellent in taste, perfume and nutrition. The method comprises the steps of boiling 4.85 times weight of water, putting a sulfur duck to the boiling water, and heating it for 5 hours; soaking glutinous rice in 1.25 times amount of the water used for boiling the sulfur duck for 1 hour or more; putting a garlic powder and bamboo salt to the remaining water and heating it for 10 min; putting the sulfur duck, the soaked glutinous rice and the water used for soaking the glutinous rice to the garlic solution and heating it for 20 min; putting a perilla oil to the obtained one and steaming thoroughly it for 5 min; packaging it; and sterilizing the packaged one at 120 deg.C for 1 hour by wet method.
