Functional watery radish kimchi(dongchimi) prepared by fermenting watery radish kimchi(dongchimi), an extract of Acanthopanax Senticosus, licorice root, Polygonatum odoratum and chicory and a lactic acid bacteria starter is provided. The food product has immune enhancing and anticancer activity while retaining characteristic sensory properties of watery radish kimchi. The functional watery radish kimchi is prepared by mixing 1.0 to 5.0% by weight of extract and its residue of Acanthopanax Senticosus, licorice root, Polygonatum odoratum and chicory mixtures, 2 to 10 parts by weight of a lactic acid bacteria starter and 100 parts by weight of conventional watery radish kimchi composition and fermenting at 5 to 15deg.C for 5 to 10 days. The watery radish kimchi composition contains 0.13 to 0.20 parts by weight of sugar and 0.003 to 0.01 parts by weight of stevioside. The lactic acid bacteria starter is obtained by culturing lactic acid bacteria segregated from conventional fermented kimchi. |
