Delta-T cooking process control method is new. Delta-T cooking process control method comprises: (a) determining a desired core temperature KT sfor food, e.g. chilled food, and corresponding initial oven temperature GT 0; (b) placing food with an initial core temperature KT 0, initial edge temperature RT 0and initial surface temperature OT 0in oven, KT 0being below GT 0; (c) heating the oven to GT 0; (d) continuously or periodically measuring the actual core temperature KTa, the actual edge temperature RT a, the actual surface temperature OT aand the actual oven temperature GT a; (e) lowering GT 0to a conversion temperature GT uwhich corresponds to the sum of each actual core, edge and surface temperature and its own predetermined temperature difference; (f) increasing the oven temperature once the conversion temperature is reached until the desired values for core, edge and surface temperature are reached.
