PROBLEM TO BE SOLVED: To provide an inversion type fryer where equipment is compact, energy consumption is reduced, and cleaning of the inside of an oil tank is easy, and which is free from irregularity in deep frying between front and rear sides. SOLUTION: To a horizontal shaft 10 provided at one end of the upper part of the oil tank, a frame 11 provided with an inclined standing part at its end on the side of the horizontal shaft 10 is pivotally attached so as to take a soaking position inside the oil tank and a pull-up position over the oil tank. At side plates 12 on both the sides of the frame 11, a pair of endless chains 13 are stretched so as to be raised from an oil surface at the inclined standing part but to reciprocate in the oil at a horizontal part. Between the pair of endless chains, a large number of cases 20 for frying provided with openable and closable lids 21 are set, and inverted vertically by a sporocket in the oil on the opposite side of the horizontal shaft 10.
