PROBLEM TO BE SOLVED: To provide a kneading and mixing blade for preparing bread dough that can attain satisfactory kneading and mixing even in the case that the amount of the bread dough to be kneaded is small. SOLUTION: The mixing and kneading blade comprises the boss part detachably attached to the rotation axis and planar plate shape first and the second blades that extend from the boss part outward mutually opposite directions. The first blade is arranged in an almost horizontal direction. The second blade is arranged in an almost vertical direction and its side face is inclined to the direction so that the inclined side face is pressed downward by the bread dough and its bottom face is arranged so as to come closer and face to the inner bottom face of the vessel during rotation. A grip extruding from the upper face of the hub is provided on the part near the hub among the top edge face of the second blade and other top edge face part other than the grip part is formed lower than the upper face of the hub.
