A method for preparing a horseradish extract-encapsulated alginate microcapsule is provided to obtain the microcapsule, which has antibacterial activity by encapsulating the horseradish extract, and improves usability of the horseradish extract by cutting of strong irritation and high volatility of the horseradish extract. The method comprises the steps of: (a) extracting cut horseradish with water at a temperature of 35-37 deg.C for 1-2 hours to prepare a water extract of horseradish; (b) concentrating the water extract of horseradish; (c) mixing the concentrate of the horseradish water extract with an alginate solution; (d) spraying the mixture solution obtained from the step(c) to a polyvalent cation solution such as CaCl2, BaCl2, SrCl2, MgCl2 and ZnCl2 through a nozzle; and (e) washing and drying microcapsules formed from the step(d). The alginate microcapsule encapsulates the extract of horseradish and has a diameter of 0.1-1.0 nanometer.
