<p>The procedure is for the production of sweetened coffee, involves cleansing of impurities from gathered beans, selection by flotation and dry pulp extraction. The coffee beans, together with the mucilage, and teh skins which cover them are allowed to dry in the shade in perforated trays or gratings, with removal of product periodically, for a period of 1 to 20 days until the mucilage is desiccated. In this process of drying, the coffee grains absorb by capiliarity water or humidity, sugars and other substances of the mucilage, gaining in sweetness and teh dried mucilage and skins are separated in a thresher before passing to another process.</p> |
