PROBLEM TO BE SOLVED: To provide a drier and a drying control method capable of achieving efficient drying according to yields and achieving optimal drying according to the condition of dry matter. SOLUTION: One or a plurality of moving type drying chamber units 12 are detachably secured or connected to a hot air generator 11. The hot air generator 11 has a suction opening 21 bored in its top and a hot air outlet 22 cut in its bottom, the suction opening 21 having a suction damper 23. Each of the drying chamber units 12 has an exhaust opening 34 cut in the top of a casing 24, the exhaust opening 34 having an exhaust damper 33. A hot air inlet 30 opposite to the hot air outlet 22 and a hot air return opening 36 opposite to a hot air circulation opening 35 are bored respectively in the bottom and the top of one side wall of the casing 24. A hot air branch opening 37 with a closing damper 38 and a hot air confluence opening 39 with a closing damper 40 are bored respectively in the bottom and the top of the other side wall of the casing 24.
