It is intended to provide a food in which wheat germ is employed as one of the starting materials so as to elevate the oligosaccharide content and a process for producing the same. Wheat sees are soaked in cold or warm water for a definite period of time followed by a germination treatment. The wheat germ thus obtained is employed as one of the starting materials for a food. Thus, it is possible to obtain a food containing oligosaccharides (for example, highly functional oligosaccharides such as maltotriose, maltotetraose, maltopentaose and maltohexaose) in an elevated amount without adding oligosaccharides per se and a process for producing the same. |
