<P>PROBLEM TO BE SOLVED: To provide an agent for improving a loosening property of a grain processed food in order to provide the food which is readily edible because of good loosening property without bonding the grain processed foods when eaten. <P>SOLUTION: The grain processed food, e.g. Chinese noodle, pasta, noodle, buckwheat noodle, instant noodle, millet cake or skin of Chinese meat dumpling is surface-treated or formulated with galactoxyloglucan or low-viscosity galactoxyloglucan to improve the loosening property of the grain processed food. The surface-treating content or formulation content of the galactoxyloglucan or low-viscosity galactoxyloglucan is 0.01-10 wt.% based on the grain processed food. <P>COPYRIGHT: (C)2007,JPO&INPIT |
