PROBLEM TO BE SOLVED: To provide a method for producing leaf vegetables having a reduced nitrate content and high safety to the human body. SOLUTION: The method for producing leaf vegetables having a reduced nitrate content comprises mixing dried soil with wheat bran and/or powder composed of wheat flour and wheat bran and decomposing the mixture in soil for 20-150 days to prepare soil for cultivation and cultivating leaf vegetables in the soil for cultivation for≥20 days until harvesting.
