摘要 FIELD: biotechnology; methods of production of the proteolytic enzymatic. ^ SUBSTANCE: the invention is pertaining to biotechnology, in particular, to production of the enzyme preparation and may be used in production of the food products made out of the slightly ripening fishery entities of the Volga-Caspian region. The method provides for comminution of the raw. The comminuted raw is subject to the autolysis at presence of water at the water duty of 1:0.5 at pH 6.2 ± 0.2 within 1-5 hours. After the autolysis the liquidic autolysate containing the proteolytic enzymes is separated by centrifuging and subjected to purification by the isopropyl alcohol at the water duty of 3:1 during 30-40 minutes. Produced during the purification the liquid enzyme preparation is dried at the temperature of 150-180°C during 5-8 seconds.
