FAT COMPOSITION CONTAINING PHOSPHOLIPID AND LONG-CHAIN POLYUNSATURATED FATTY ACID SUPPLYING COMPOUND AND FOOD USING THE SAME

A fat composition which contains an LCPUFA-supplying compound having an LCPUFA in its structure and being capable of releasing the LCPUFA upon hydrolysis as the first component and a phospholipid as the second component. The composition ratio of these components is determined based on the number of the hydrolyzable fatty acid bond structures contained in the phospholipid molecule. Thus, the phospholipid and the LCPUFA- supplying compound are metabolized to form LCPUFA-PL in vivo followed by the absorption of the same. Owing to this mechanism, it is possible to obtain a fat composition by which the LCPUFA-PL level in vivo can be efficiently elevated without resort to a phospholipid having a long-chain polyunsaturated fatty acid (LCPUFA) as a constituent thereof (LCPUFA-PL) while taking the metabolism in vivo into consideration.
