In apparatus for heat treating food in the form of pieces (20), having an inlet reservoir (30) for storing the pieces, a piece combining device and an oven (12), where the reservoir has a transporter (14) with first and second relatively movable supports (38, 40) for supplying the pieces to the combining device, the supports are in the form of lattice gratings. Independent claims are also included for two variants of the apparatus, in which (instead of or in addition to the transporter supports as above): (1) the combining device has two sets of relatively movable supports (52, 56), each with prong-like, projecting catching elements (54, 58, 60) located one above the other, the lowest catching element (60) of the second set of supports (56) being tiltable held on the supports; and/or (2) at least one sensor (61, 63) is provided for determining the humidity and/or temperature, and is coupled with the air guiding system to regulate the air humidity and/or temperature within the inlet reservoir and/or the combining device.
