<P>PROBLEM TO BE SOLVED: To provide a beverage extractor and a beverage extraction method capable of extracting a beverage in a short time without damaging the flavor of an extracted beverage. <P>SOLUTION: Since the molecular motion of low temperature water A is activated by ultrasonic waves emitted inside an extraction cylinder 12, the permeation of the low temperature water A to tea leaves B is accelerated. Also, since cavitation 20a generated by the ultrasonic waves emitted inside the extraction cylinder 12 collides with the tea leaves B, the beverage is efficiently extracted in a short time. Also, since the tea leaves B and the low temperature water A are agitated by the vibration of the ultrasonic waves emitted inside the extraction cylinder 12, tea extract is further extracted and a desired tea beverage is generated.
