<P>PROBLEM TO BE SOLVED: To provide a medium capable of being integrally made into a food with esculent basidiomycetes as it is without requiring separation and removal of the medium. <P>SOLUTION: The medium for the esculent basidiomycetes comprises a material obtained by subjecting a germinated brown rice to growth-inhibition treatment. The growth-inhibition treatment of the germinated brown rice is used for inhibiting the germination of the once germinated brown rice so as not to be germinated more.
