A method for making a food material using beans is provided to obtain a food material containing various physiologically active substances and nutritional elements unique to bean curd and having a novel taste via a modified bean curd producing process. The method for making a food material using beans comprises the steps of: washing beans and swelling the beans in water; grinding the beans while adding water thereto; separating soy milk from soy pulp; heating the soy milk to 100 deg.C in a stepwise manner; aging the boiled soy milk and solidifying the soy milk in the presence of a solidifying agent formed of magnesium chloride, salt and gluconodeltalactone; dewatering and compressing the solidified bean curd under a pressure of 500-1500 kg by stacking non-solidified bean milk layers with a separator sheet interposed between the layers; separating a compressed solid by removing the separator sheet; and chopping the solid or pressing the solid by using a mold. |
