Provided are a food material extract derived from squeezed grape by-products, which contains more polyphenol than that of grape, recycles waste grape, and is usable as a food material and health food, and a method for manufacturing food using the same. The method for manufacturing fermented grape peel cake, fermented grape peel extract liquid, concentrate thereof, and fermented grape peel distillate obtained upon concentration comprises the steps of: adding 10-40kg of water, 0.01-1% of cellulase, 0.01-1% of yeast, and 0.5-10kg of ground grape branches to 100kg of squeezed grape cake, a byproduct obtained from grape processing; fermenting the mixture at 5-35‹C for 1-4 weeks; and juicing the fermented material by a general method.
