PROBLEM TO BE SOLVED: To provide a milk serum food for widening use of milk serum and designed for effective use, and to provide a method for producing the milk serum food. SOLUTION: This method for producing the milk serum food comprises fermenting milk with lactic acid bacteria, separating the product into curd solidified by fermentation and milk serum, filtering the separated milk serum with an ultrafiltration film, adding lactase to membrane impermeable concentrated liquid to dissolve milk sugar, mixing cream together with saccharides with the enzymolysis liquid, and concentrating and sterilizing the product with a vacuum evaporator at low temperature at which no Maillard reaction is caused.
