An apparatus for measuring water holding capacity of meat is provided to simultaneously compress several meat samples at regular pressure, thereby measuring the water holding capacity value with reliability. The apparatus for measuring water holding capacity of meat comprises: a pressurizing member(12); a support(2) installed at the bottom under the pressurizing member; a plurality of guide rods(3) which is located to avoid a moving path of the pressurizing member and is extended toward the upward vertical direction of the support with a lower end portion being fixed at the support; a plurality of plates(1) which has a plurality of through-holes to allow the guide rods to pass through the through-holes and is accumulated on the support with layers in the vertical direction thereof with the guide rods penetrating therethrough; and a pressurizing member driving tool which is connected to the pressurizing member to move the pressurizing member up and down, thereby pressurizing the upper side of the uppermost layer plate among the accumulated plates through the pressurizing member and includes a compressor, a pneumatic cylinder(13), a piston(15) connected to the pressurizing member through a piston rod(14) and a support to support the pneumatic cylinder.
