Provided are dried red peppers, which are safe and sanitary because foreign substances, microorganisms, residual chemicals, etc are removed, have a good quality and a minimized quality deviation, and a manufacturing method thereof, which prevents a change in quality such as color and taste. The method for manufacturing dried red peppers comprises the steps of: washing the surfaces of red peppers using washing water generating air bubbles and including a chemical germicide; removing seeds from the red peppers; sterilizing the red peppers; drying the red peppers to a moisture content of 20-50wt%; drying the dried red peppers to a moisture content of 11-15wt%; cutting the red peppers finely; sorting the red peppers by taste and color and mixing the sorted red peppers; and sterilizing the mixed red peppers. |
