FIELD: oil and fat industry. ^ SUBSTANCE: invention relates to methods used for protection of lipids, oils and fats against oxidation. The composition involves phenolic antioxidant and lecithin as synergist of antioxidant. As a phenolic antioxidant method involves using bis-[3-(3',5'-ditert.-butyl-4-hydroxyphenyl)propyl]-disulfide. The claimed composition is added in the amount 0.15-1.77% of lipids, mass and all components are taken in the definite ratio. Invention provides reducing the process rate of oxidation of lipids by 2-4 times and to decrease the level of hydroperoxides formed during oxidation of lipids by 44.4%. ^ EFFECT: valuable anti-oxidizing properties of composition. ^ 3 tbl, 5 ex |
