<P>PROBLEM TO BE SOLVED: To provide a method for cooking non-fumigated gourd strips the strength of which is improved to have the same strength as that of fumigated gourd strips so as to be hard to break even after seasoned in spite of being non-fumigated one. <P>SOLUTION: The method for cooking gourd strips comprises soaking dried gourd strips or those restored with water in a solution containing alkaline chemicals adjusted so as to have pH 6-9 after soaked, and thereafter cooking the gourd strips. The method further comprises a process of eliminating the alkaline chemicals impregnated into the gourd strips through washing the gourd strips prior to cooking them after soaked in the solution containing the alkaline chemicals. <P>COPYRIGHT: (C)2007,JPO&INPIT |
