METHOD FOR PRODUCING gamma;-AMINOBUTYRIC ACID (GABA) USING MONASCUS SP

A method for producing gamma-aminobutyric acid(GABA) is provided to be able to improve the productivity of the GABA by selecting Monascus sp. capable of highly producing the GABA and using germinated buck wheat. To produce GABA, Monascus sp. such as Monascus purpureus(ATCC 6405), Monascus purpureus(IFO 32229) and Monascus purpureus(ATCC 16358) is cultured in a culture medium containing un-peeled and germinated buck wheat as substrate at a temperature of 26-30 deg.C under pH of 3-6. The culture medium contains fructose or glucose having a concentration of 5-15% as a carbon source, monosodium glutamate, alanine or glutamate having a concentration of 1-4% as a nitrogen source, glycerol or ethanol having a concentration of 0.5-1.5% as an organic compound and NaH2PO4 or NaNO3 having a concentration of 0.1-0.5% as a mineral.
