A roasting apparatus with a vacuum pump is provided to prevent indoor pollution by discharging oil and smoke from fish or meat in a roasting chamber separately, and to restrict an absorbing pipe from being blocked due to solidification of oil by forming a heater in the absorbing pipe. A roasting apparatus includes: a roasting unit(110) having a roasting chamber, a temperature sensor(112) detecting internal temperature of the roasting chamber, an exhaust valve(113) regulating pressure and discharging smoke from the roasting chamber, and a safety valve(114) preventing explosion and roasting meat or fish by heating the roasting chamber with a heater; an absorbing filter(120) connecting to the roasting chamber with an absorbing pipe(a) and filtrating solid and dreg in the roasting chamber; an oil collecting tank(130) connecting to the absorbing filter and having an exhaust pipe(131) with an exhaust valve(132) discharging smoke from the absorbing filter, an absorbing pipe(b) absorbing saturated oil and an oil discharge pipe(133) with an oil discharge valve(134) removing collected oil; an auxiliary tank(140) connecting to the oil collecting tank and having a resistance plate with a through hole diagonally inclined and an absorbing pipe(c); a vacuum pump(150) connected to the absorbing pipe to discharge oil, smoke and impurities from the roasting chamber; and a circulation pump(160) forcibly discharging oil and dreg by forcibly circulating air and water through the absorbing passage. A heater is formed outside the absorbing pipes to prevent oil from being solidified.
