PROBLEM TO BE SOLVED: To provide a new material for imparting cheese flavor as new effective use of an albumen hydrolysis product hydrolyzed with protein splitting enzyme, and to provide a processed food using the material.

SOLUTION: This material for imparting cheese flavor contains as active ingredient an albumen hydrolysis product hydrolyzed with protein splitting enzyme. The processed food having cheese flavor is added with the material for imparting cheese flavor and subjected to heat treatment.
