A casein hydrolyzate, especially one whose in vivo manifestation of functions, such as antihypertensive activity, is promising, which casein hydrolyzate comprises a peptide, such as a nonbiodegradable peptide having minimized its in vivo zymolytic activity, and free amino acids; a process for producing the same; and use thereof. In particular, the casein hydrolyzate is obtained by hydrolyzing animal milk casein into an average chain length of 2.1 or less in terms of amino acid residue quantity, and contains free amino acids and a peptide, such as a nonbiodegradable peptide, e.g., XaaPro or XaaProPro. The casein hydrolyzate exhibits an ACE inhibitory activity or antihypertensive activity. |
