A method for producing a water-dispersible powder containing phytosterols is described. The method involves encapsulation of the phytosterols with starch and a modified starch which is a starch ester, and preferably a surfactant. Suitable starch esters are starch alkenyl esters especially starch alkenyl succinates. |
