FIELD: food industry. ^ SUBSTANCE: method comprises breaking elder fruit, extracting fiber, filtering extract and evaporation thereof. Extraction is effected under process parameters found via optimization of regression equation and being the following: zeta = (1:5) - (1;6); tau = 2.5-2.6 h; T = 40-45°C; C = 50-55% ethyl alcohol acidified with 1% citric acid. ^ EFFECT: optimized process and created conditions ensuring optimal yield of anthocyanins at minimal consumptions of time, power, and extractant with maximum preservation of biologically active substance therein and taste qualities thereof. ^ 1 tbl |
