Provided are a coagulant for allowing dubu (bean curd) to be manufactured without using salt water or a chemical coagulant, and a method for preparing salt water-free dubu by using the coagulant. The coagulant comprises at least one selected from a cactus powder; a cactus extract obtained by extracting a cactus with water or at least one solvent selected from the group consisting of methanol, acetone, ethanol, propanol, butanol and their mixture; a low temperature extract of a cactus; and a fermented solution of a cactus obtained by using microorganism, as a main ingredient. Preferably the cactus is Opuntia ficus-indica L. var. saboten. |
