PROBLEM TO BE SOLVED: To provide a method for industrially suitably producingβ-ketonitriles, capable of obtaining theβ-ketonitriles by a simple procedure with high purity in a high yield from aliphatic carboxylic acid esters easily available. SOLUTION: This method for producing theβ-ketonitriles comprises (A) a reaction operation process for reacting the aliphatic carboxylic acid ester with acetonitrile in the presence of a metal alkoxide, so as to synthesize a metal salt of theβ-ketonitrile, (B) a layer separation process for adding an organic solvent and water to the reaction liquid, mixing them, and subjecting the mixture to layer separation into an organic layer and an aqueous layer, so as to obtain the aqueous layer (an aqueous solution) containing the metal salt of theβ-ketonitrile, and (C) a neutralization and extraction process for adding an acid to the aqueous solution obtained by the layer separation process and containing the metal salt of theβ-ketonitrile, neutralizing the solution, and extracting the solution by an organic solvent, so as to acquire the isolatedβ-ketonitrile.
