It is intended to provide a treatment method of producing fresh shrimps, either natural or farmed ones, having enriched deliciousness which can be easily introduced into the course of processing while maintaining the freshness; and processed shrimp products having enriched deliciousness over a broad scope including fresh ones, frozen ones and cooked ones. Shrimps having enriched deliciousness in which the content of 5'-inosinic acid (IMP) in nucleic acid-relating substances is 40% or more; and a method of producing shrimps having enriched deliciousness, in which the content of 5'-inosinic acid (IMP) in nucleic acid-relating substances is 40% or more, characterized by comprising maintaining the shrimps at a temperature of from 10 to 50<SUP>o</SUP>C for 0.1 to 24 hours. |
